A collaboration between top dry German Riesling producer from Pfalz - Christmann and ex-Bollinger winemaker/Chaf de Cave - Matthieu Kauffmann!
This ultra limited production is a blend of Pinot Noir (50%), Chardonnay (25%) and Pinot Blanc (25%). Grapes come from their home village Gimmeldingen and Konigsbach where Christmann's famous IDIG Grand Cru is located. 70% barrel fermented.
With perfect exposure of East-south East and soils consisting of chalk and sandstone, these young-ish vines of 13-19 years old produce fruits which make precise, clean, pure lemon-lime, grapefruit and mineral driven sparkling wine! The fruit is just ripe and the texture from the spontaneous yeast barrel fermented technique is spot on.
25 months on lees. Zero dosage. Disgorged in April 2023.
