Given the ongoing climate change, Chablis being so far north (and having cool climate) only stands to benefit. i.e. they will make better and better wines.
If there is a one to follow for Burgundy wines, that has to be Burghound (Allen Meadows). This wine was rated 92 pts.

Otherwise there is good richness to the tightly focused medium-bodied flavors that brim with dry extract that imparts a sappy texture to the super-saline, textured and beautifully long finale.
