Silver Heights is made by one of the most famous winemaker in China - Emma Gao. She was trained at Chateau Calon Segur, the famous 3rd Growth in Bordeaux and eventually married the cellarmaster of Calon Segur. Now she is back in China making big waves with her Silver Height wines. The Cabernet Sauvignon plant materials that they plant in Ningxia (famous wine growing region in China with the same latitude as Bordeaux) were from Bordeaux.
The Summit is their flagship wine. Typical Cabernet Sauvignon nose of green capsicum (grilled in this case), sweet vanilla and cloves spices and very ripe blackcurrent and dark cherry frutis. Full bodied, medium acidity with high alcohol but balanced by massive/dense black fruits...almost jammy. Good tannin structure when first opened. It tasted much more balance and delicious on the 2nd day (much better!). If you like very fruity and deep fruited wines, you must try this. Very impressed indeed. This wine should be drunk with food! This will have excellent ageing potential. Drink now with decanting till 2035.
Food Pairing: Over dinner (it's too heavy and full bodied for lunch!) say with some hearty prime ribs and tomahawk rib-eye. It could even pair with a rich chocolate cake! :)
